For the base:
One hundred twenty-five grams of flour
Sixty grams of butter
Forty-five grams of powdered sugar
a yolk

Mix all ingredients in a bowl , we extend the dough on a mold, the same as used for the frosting , place in a preheated oven at 175 ° C for 20 minutes, let cool .

For the frosting :
Two hundred and ten grams of flour
eight eggs
A teaspoon of yeast
Two hundred fifty grams of sugar
Hundred or a hundred and fifty grams of cocoa

Separate the whites from the yolks and beat them until stiff with the sugar , mix the flour with cocoa and yeast. Beat the yolks until they turn whitish . Add to the yolks sifting the flour mixture with yeast and cocoa , which have previously mixed . We place the dough in a greased and floured pan 26 inches in diameter , we preheated oven at 150 ยบ C and let bake for 55 minutes.

For the filling:
Four hundred grams of sour cherries or stewed amarinadas ( a jar )
Three tablespoons cornstarch ( cornflour )

We drain the cherries , reserve a quart of liquid. We separate the liquid and mix four tablespoons cold with cornstarch . We boil the remaining liquid , when starting to boil add the starch mixture with the liquid and store 16 cherries for garnish.

To decorate :
One liter of double cream
Five small packages cream or gelatin stabilizer
Fifty grams of cherry jam or jelly
Fifty grams of grated chocolate
Fifteen tablespoons kirsch or black forest sour cherry liqueur
