White Chocolate Cappuccino Cake

Ingredients - serves twenty

300g butter (unsalted) at room temperature and additional for greasing
250g self-raising flour and additional for dusting
200g caster sugar
three sizable eggs â beaten
one ½ tsp baking powder
50ml whole milk
one tsp vanilla extract
125g white chocolate
125ml double cream
two tbsp espresso â cooled
75g icing sugar sifted with additional to dust

Instructions:

greek yogurt sauce recipePreheat the oven to 180°C (conventional oven) 160°C (fan assisted) or Gas Mark four
Take an 8 cake tin & dust it with self raising flour
Place the caster sugar & 175g of the butter in to a mixing bowl & beat together until white & creamy. Slowly add the eggs in stages, beating well in between each stage
Fold in the remaining self raising flour, add the baking powder, milk & vanilla extract & fold in to the mixture. Spoon the mixture in to the dusted cake tin & smooth to a level surface
Bake in the oven for 40-50 mins â cake is ideal when a skewer inserted in to the middle of the cake comes out neat, remove from the oven. Leave the cake to icy for five mins after removing from the oven then turn out onto a wire rack & leave to icy . One time the cake has cooled cut in to halves.(snickers cake recipe).
Grate 25g of white chocolate & place in to a bowl with the double cream & espresso. Whisk together until the mixture holds soft peaks then spread a pleasant thick layer over of the cake halves, then place the other cake half on top.
Place a heat proof bowl over a pan of simmering water & add the remaining white chocolate & melt gently. One time melted leave to icy for around ten mins. In another bowl beat together the icing sugar with the remaining butter until white & creamy then add the cooled white chocolate & whisk again. Spread the mixture all over the top & sides of the cake, decorate the top with milk chocolate eggs & dust with icing sugar.
