Chocolate Chip Biscotti
2 cups whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 stick butter (1/2 cup)
1 cup sugar
2 tsp vanilla extract
1 cup chocolate chips (any kind)
Pre heat oven to 350C. Line baking sheet with parchment paper.
Mix together whole wheat flour, baking powder, baking soda and salt.
In another large bowl whisk together butter, sugar, eggs and vanilla extract. Whisk on high for 2 minutes. Scrape the sides of the bowl in between.
Add half the flour mixture and whisk for a minute. Add remaining half of dry mixture and mix everything well using a spatula.
Mix in chocolate chips and mix everything well.
Divide the mixture into 3 parts. Form each part into a log and place it on the baking sheet. Make sure there is 2 inch space between the logs.
Bake the logs for 30-32 minutes until the appear firm to touch. Remove from oven and let them cool for 15 minutes. Keep the oven warm as these cookies need to be baked again.
Cut each log into 1 1/2 strips on an angle and place the strips back on the parchment paper.
Place the baking sheet back in the oven and bake for another 15 minutes. The time might vary depending on the thickness of the cookies. Bake them until they are slightly golden brown on the top.
Remove from oven and cool before storing them. They will stay well for a week in air tight container.
