The Strawberry Banana Muffins

Whole Wheat Strawberry Banana Muffins

Cook Time: 40 minutes
  1. 1 cup whole wheat flour
  2. 1/4 cup all purpose flour
  3. 1 large egg
  4. 1 1/2 cup starwberries sliced
  5. 1 cup mashed bananas (2 large)
  6. 1/4 cup vegetable oil
  7. 1/4 cup low fat milk
  8. 1/4 cup low fat yogurt
  9. 1 tsp baking powder
  10. 1/2 tsp baking soda
  11. 1 cup sugar
  12. 1/2 tsp vanilla
  13. 1/4 tsp salt
  1. Preheat oven to 350F.
  2. Line a muffin pan with liners or use grease the pan with cooking spray.
  3. In a large bowl sift together whole wheat flour, all purpose flour, baking powder, baking soda and salt. Set aside.
  4. In another bowl beat (or use a whisk) together egg, sugar, vanilla and oil, until the mixture turns creamy.
  5. Stir in in milk, yogurt and bananas, ensuring that it is evenly mixed with the egg mixture.
  6. In 1/3 batches mix the dry ingredients with the wet ingredient mixture, making sure wet and dry ingredients are incorporated properly.
  7. Fold in strawberry slices gently.
  8. Using 1/4 cup measure, fill in the muffin pans with the mixture. Only fill in 3/4 of each muffin cup, as they will rise during baking.
  9. Bake for 35-40 minutes (depending on oven) until a toothpick inserted in the center muffins comes out clean.
  10. Remove from oven and let it cool completely.
