Makes 12-16
INGREDIENTS
- 225g self-raising flour
- 225g rolled oats
- 1 tsp bicarbonate of soda
- 225g honey butter, such as Kerrygold Honey Spread
- 225g sugar
- 2 tbsp golden syrup
- 2 dessert apples, peeled, cored and finely chopped
- 110g raisins
Method
- Preheat the oven to 180°C/gas mark 4. In a bowl, mix together the flour, oats and bicarbonate of soda.
- Place a saucepan on a medium-low heat, add the honey butter, sugar and golden syrup and stir together for a few minutes until melted and dissolved. Remove the saucepan from the heat and stir into the flour and oat mixture.
- Press half the mixture in to a greased and lined square tin. Mix together the apples and raisins then sprinkle over the mixture in the tin and spread the remaining oat mixture on top.
- Place in the oven and bake for about 30 minutes until golden, then leave to cool for a few minutes before cutting into squares and placing on a wire rack to cool.
