Rachel Allen: apple and honey squares

Makes 12-16

INGREDIENTS

  • 225g self-raising flour
  • 225g rolled oats
  • 1 tsp bicarbonate of soda
  • 225g honey butter, such as Kerrygold Honey Spread
  • 225g sugar
  • 2 tbsp golden syrup
  • 2 dessert apples, peeled, cored and finely chopped
  • 110g raisins

Method

  1. Preheat the oven to 180°C/gas mark 4. In a bowl, mix together the flour, oats and bicarbonate of soda.
  2. Place a saucepan on a medium-low heat, add the honey butter, sugar and golden syrup and stir together for a few minutes until melted and dissolved. Remove the saucepan from the heat and stir into the flour and oat mixture.
  3. Press half the mixture in to a greased and lined square tin. Mix together the apples and raisins then sprinkle over the mixture in the tin and spread the remaining oat mixture on top.
  4. Place in the oven and bake for about 30 minutes until golden, then leave to cool for a few minutes before cutting into squares and placing on a wire rack to cool.
