Meringue cake with chocolate base

Ingredients chocolate cake base :
- 5 eggs
- 5 tablespoons sugar
- 5 tablespoons flour
- 4 tablespoons bitter cocoa
- 1/ 2 teaspoon salt
- 1 and 1/ 2 teaspoon ground allspice

Italian meringue :
- 100 cc water
- 240 grams of sugar
- 4 egg whites
- 1 teaspoon coconut essence

Other ingredients :
- 500 grams of sweet leche
- 100 grams of pecans
- Chocolate covered

How to make chocolate cake for the base:
- Beat the eggs point to tape with sugar.
- Add through a sieve flour , cocoa , salt and allspice .
- Integrate quickly with spatula.
- Place in a pan of 26 cm in diameter, greased and floured .
- Bake in moderate oven about 15 minutes, until the cake appears from the pan and a toothpick inserted in the center comes out clean.
- Remove from the oven , wait 5 minutes , unmold and let cool on rack .

How to Make the Italian meringue :
- Put the sugar in a saucepan , cover with water and boil until a syrup to hard ball point .
- To prove the point , pour a teaspoon in a glass of water and check that a hard ball like candy forms.
- Beat the egg whites firm .
- Add the syrup in the form of thread.
- Perfume with coconut essence and continue beating until meringue is still warm.

Arm meringue cake with chocolate base :
- Place the cake on a platter .
- Spread with caramel and sprinkle with half of the chopped pecans .
- Cover irregularly with Italian meringue and , if desired, toast it lightly with a blowtorch.
- Garnish with remaining pecans .

Note:
- Pecans are also known as pecans , American or tiger .
- Can be replaced with common nuts.
