  • 1 slice white bread, crust removed
  • 1 1/2 tbsp extra virgin olive oil, plus more for brushing the burgers
  • 1/4 cup fresh flat-leaf parsley, finely minced
  • 2 tbsp onion, very finely minced
  • 1 egg
  • 1 1/2 tsp smoked paprika
  • 3/4 tsp cumin
  • 1/2 tsp garlic powder
  • Heaping 1/4 tsp cayenne pepper
  • 1/2 tsp salt, or more to taste
  • 1/2 tsp pepper, or more to taste
  • 1 1/2 tbsp applesauce
  • Vegetable oil, for frying (optional, if not grilling)
  • 10 slider-sized buns for serving

LEMON HERB MAYO INGREDIENTS

  • 1/2 cup good quality mayonnaise (I like Spectrum)
  • 2 tbsp fresh basil, minced
  • 1 tbsp fresh parsley, minced
  • 1 tbsp freshly squeezed lemon juice
  • 1 1/2 tsp lemon zest
