• 1 round pita bread
  • Extra virgin olive oil*
  • 1 very ripe tomato, sliced
  • 1 ounce fresh goat cheese*, cut into rounds
  • 1 teaspoon prepared basil pesto*
  • Parmesan cheese (optional)

Position rack in center of oven. Place baking sheet on rack. Preheat oven to 400°F. Brush both sides of pita with olive oil. Cover one side with sliced tomatoes. Transfer to hot baking sheet. Bake 5 minutes then add goat cheese and dot with pesto. Sprinkle with Parmesan, if desired. Bake another 5 minutes or until cheese melts and crust is crispy.
